Of course you don't need *all* of them. The easiest way to go is to
install the bundle-foo virtual packages, which are basically empty
installations that depend on also installing the core components of a
larger system. So
% sudo fink install bundle-gnome
Will pull in all the necessary libraries & applications related to Gnome,
but not the extras; you can optionally elect to install them later.

X11.app doesn't have a fullscreen mode, so if you install Gnome or KDE, it
will run concurrently with Aqua if you use X11.app. If on the other hand
you use XDarwin.app, then you do have access to a full screen mode, at
which point you end up getting-to / having-to (depending on your point of
view) toggling between an Aqua environment and an X11 & Gnome/KDE one.
Which you choose is a matter of preference.
