I believe that what you want to do is to run the X11 server on your Mac, but the windows manager on the remote server. You can comment out any windows manager in your ~/.xinitrc file: for instance, quartz-wm. You will probably want to start an xterm. From the xterm, log into the remote system via ssh -X and type the command used on that system to start your window manager of choice.
