Works with 'open' from a Terminal window too:
$ open `type -path xeyes`
X11 starts in the normal way if it's not running, and up pops xeyes.
Neat.
My guess is that the Finder is sniffing the binary to see if it depends
on any shared libraries under /usr/X11R6/lib, and handing it off to the
X11 application if it does.

I just double-clicked on 'xfig' in my Fink installation area without
running X11 beforehand, and it started right up. I'm not sure what
the Finder does to determine that the program needs X11, but it works.

http://www.apple.com/macosx/features/x11/ mentions this feature:
"Double-click apps Launch X11 applications directly in the Finder"
but there doesn't appear to be any documentation about it.
