I have the latest X11 package. I know you can run startx to start x
windows without an xterm. I just thought it would be nice to start
from the dock. I will use the terminal and forget starting uo using
X11.app. Apparently it is tightly bound to an xterm.

Yes. Run in a terminal:
defaults write org.x.x11 app_to_run /usr/bin/true
You may have to write org.x.x11_launcher instead, if you haven't
upgraded to a newer X11 package from http://xquartz.macosforge.org/.
