Why do some build settings have lines through them?

As a relative newbie to XCode I don't understand the significance of why certain build settings in the Get Info Build window have horizontal lines stroked through them. Is this just on my setup (QuickSilver 2001 G4 Mac OS X 10.3.2 XCode 1.1)? Or have others seens this as well.

For example on the project I am working on if I Inspect the GNU C/C++ Compiler settings I see that the following appear as described above:
Generate Debug Symbols, Optimization Level, Generate Position Dependent Code, Fix & Continue.
