Please file a bug on that. We should be treating all .sdef files
equally when it comes to Open As...

Go to the "File Types" preference pane and find the "text.sdef" file
type (disclose the "text" item). Set it to be "Plain Text File"
instead of the default value. Now when you open an .sdef file in
Xcode it should open up as text.
If you want to have a different behavior infrequently, use the File-
Open As... menu item (it's also in the contextual menu).
Scott, the Open As... menu behaves inconsistently, depending on
whether the
sdef file in question is the primary sdef file listed under the
Info.plist
file's OSAScriptingDefinition key. If it is the primary sdef file,
the Open
As Plain Text option is the only one provided as a menu item, and
double-clicking it opens it as a plain text file; if it is not the
primary
sdef file, both the Open As Plain Text and Open As AppleScript
Dictionary
options are provided as menu items, and double-clicking it opens it
in the
AppleScript dictionary viewer.
