That's funny, I was just writing up a reply to this. I'll just add the following:

If you want to change the build settings that you get with a new project, the easiest thing to do is probably to create your own template project by copying one of the ones in /Library/Application Support/Apple/Developer Tools/Project Templates, making the changes you want in the default target settings, and saving it into ~/Library/Application Support/Apple/Developer Tools/Project Templates with a new name like " My Cocoa project", or something.
