search path without the headers themselves in the project.

Sure. The following features either don't work or are very sporadic
with include files that are only available via a search path:
1. Find In Project. This feature appears to only search headers that
are added to the project, unless you create explicit find paths.
2. Command-double-click of symbol name to find a definition in a
header. Now that I test it more carefully, it occasionally works, but
usually not.
3. Open Quickly. Frequently this feature is unable to find headers
that the compiler can find.
These features are fantastically useful when all the headers are in
the project, but they are very unreliable when you're relying on
header search paths.
