What documentation I need to start programming

To see all the Getting Started documents, just search for "getting started" in "Full-Text Search" mode in the Documentation window.

You can also search for "tutorial", though you'll find more sample code at /Developer/Examples than in tutorials.

Xcode -> Menu -> Help -> Documentation

Most of the sections have a "Getting Started" topic. If you have to
maintain MacOS 9 or Windows code start with Carbon, else start with
Cocoa.

Developer/Examples - ready to compile.
