Start with Xcode Help under the Help menu.  Enter keywords and hit Return.
It doesn't always find what you want, so googling is a useful followup.

For example, the keywords you mention:
  header search path
do appear to present the correct Xcode doc pages describing the build
settings used to designate header search paths.
