This is your product's Bundle Identifier and it's stored in the Info.plist.  Edit it in the project-Info.plist file or in the Properties tab of the Target inspector.

Read up on CFBundleIdentifier.

'com.yourcompany.X' where X is the name of the target. How can I
specify my own preset to be used instead of 'com.yourcompany' in this
context?

"defaults read com.apple.Xcode | grep yourcompany" did not show
anything obvious.
