In Xcode's "Help" menu select the "Show Expert Preferences Notes" item. The
first entry mentions ORGANIZATIONNAME.

defaults write com.apple.Xcode FULLUSERNAME "George Warner"
defaults write com.apple.Xcode ORGANIZATIONNAME "Apple Computer, Inc."
