I've been doing just that for several months now. Trying to live on Leopard
and Xcode 3 for the new features, but occasionally having to drop back to
Tiger and 2.4.1 for some reason or other.

The only snag I've hit is that the new IB defaults to a format that's not
compatible with the old IB, so it's easy to create a NIB that can't be
edited with the 2.4 version of tools.
