I think that OmniGraffle does a decent job for UML diagrams. A least for my
purposes...

+1 from me. It's only a marginal drawback that it doesn't offer validation, because all I care about is whether I, the rest of my team, and the software engineer on the Clapham Omnibus can understand the diagrams ;-) There are a few extra UML templates on graffletopia, which are nice.
