Yes, I've seen this happen often. We're still using 2.5 because of 3.0 and 3.1's enormous problems. Each file's encoding is stored in the project, so make sure that all users/machines that work with your projects have the same default encoding set in Xcode's prefs. Maybe that'll help. Or not.
