I can't imagine any way to do this in general, but if Apple really
had any interest in this in principle, I would have expected IB to be
able to do at least some of the work required to convert Carbon nibs
to Cocoa nibs. It's really the only thing the tools team could do to
help with the pain of transitioning from Carbon to Cocoa, and it
wasn't done.
