I have a large xcdatamodel file and I'd like to create a PDF or bitmap
of it so I can take it to a print shop and have it printed on a large
piece of paper (say a square metre).

I just can't seem to figure out how to do this... The print dialog only
seems to want to deal with my office's printer's available paper sizes...

In the "Paper Size" dropdown on the print dialog, the last item should be "Manage Custom Sizes..."
