Thanks Ralph for your info. It seems that AppleScript really can do a
lot to Ms Office for Mac. I will do some research to see if it can be
integrated into my cocoa app in a graceful manner, as it will be finally
a commercial product.

On Windows it's very easy to manipulate the text in a Word document
using the COM interface. Unfortunately I don't know if the Office
automation interfaces are available through COM on MacOS.
It does look like you can get to Office through AppleScript:
