I'm not sure what you mean by accessibility plugins.
Safari works just fine with voiceover, and 90% of web pages I encounter on a daily basis.
What specifically did you have in mind when you ask about accessibility plugins?
Obviously flash isn't accessible, but that's not safari's fault.
There are issues where voiceover misses some text on the page, but these are mostly due to multi-level nesting of <div></div> tags, though there could be some I'm unaware of just because I can't tell they're there.
I don't use the things such as point sizes, color settings and the like, because I can't see the screen well enough for those to matter, but as I said above, most pages work just fine, so if you could explain exactly what you're after, I may be able to shed some light on the topic.
