In the Script Editor's Preferences window (and all of the non-Apple script
editor/debuggers I've used). You could switch any time...the script would
translate into whatever dialect was current. (Except your own words, of
course.)

The dialects were one of the many nice ideas Apple has had on which they
did not follow through (after spending money). The initial release of
AppleScript had English, French (avec les bugs ;-)) and Japanese (also
buggy, I understand). There was a C-like dialect which never made it out
the door.

The dialects were made possible by the fact that the source is not stored
in a compiled script (without help from some of the third party
editor/debuggers)...what you see when you open a script (or even compile a
new one) is the generated code decompiled.
