Oh! I thought you were comparing StuffIt's Zip creation
with ZipIt's zip creation in terms of file size...Comparing StuffIt
and Zip is certainly reasonable, though in today's world of high
speed connections and large disks, there are MANY other issues to
consider in the comparison.

The very first file that came to hand for stuffing (a JPEG) after I read
this produced exactly that result. However, checking again on DropStuff's
preferences, I see there's an option not to stuff files that are already
compressed. Unchecking this has reversed the result for that particular
file.
You got it! Since JPEG's are already compressed, StuffIt
doesn't bother to compress it again UNLESS you tell it to.
The comparison was with DropStuff (which I'm guessing is similar to
DropZip) and StuffIt Commands. What I didn't make clear was that ZipIt
allows individual files to be added to or extracted from an archive by
drag and drop. DropStuff only stuffs in bulk and StuffIt Commands has
(obviously) to be scripted.
Correct on both counts.
Most users, however, don't tend to work that way. They work
in bulk - create an archive or expand an archive. Very few people
actually edit/manipulate/change archive contents.
