It depends on the installer. For instance, FileMaker allows you to
create a text file with the serial number and place it in the
installer's directory. Many installers are scriptable, just drop them
onto script editor to get the dictionary. Alternatively you can
create disk images of each application and use Apple Software Restore
to lay them down.
