If it's not a regular task that requires automation, don't use Apple Script.
Use BBEdit (or BBEdit lite if you don't want to pay for it). It can do
simple and regular expression search and replace on batches of files in
whole folder trees.

I have used it to convert and repair thousands of URLs in student web sites
- with one command.
