I'd just like to thank everyone for their input on this and apologise for my badly worded original question which has lead to loads of people sending me answers that while extremely helpful, didn't actually answer my question.

Under 9.1, I had an OSAX that would parse the HTML out of reams of HTML for me, just returning the bits I requested. This OSAX doesn't work under OS X and I just wanted to know if anyone had come across one that does. While not receiving an answer to this specific question, I have received 14 emails with code snippets which, along with the one included in the Apple Guidebooks, will save me having to write the HTML Parsing AppleScript myself!!!
