Michael,

The syntax is not that logical/smooth but here is how it goes

save the current document in the file ,
"server HD:desktop folder:My image" as Photoshop EPS ,
{preview type:Macintosh preview, encoding:JPEG, JPEG quality:high, ,
preview depth:pixel depth 8}
