There are several different scripts by Allen Watson at
AppleScript Central

which do this. This appears to be the best one for what you want:
Save as Text File w/o Prompt
Saves selected messages as text files in predetermined format (comes as
Simple Text files, but can be changed to use BBEdit, Tex-Edit, or Entourage
as creator for the files), in a predetermined folder (you must edit the
script). No prompts; therefore can be used as an action in a mail rule.
(Script ID: 197)
Run it from an Outgoing Rule.
