Don't forget that BBEdit comes bundled with the 'BBCommands' OSAX. It's actually one command, folder listing of' which does almost exactly what is needed, i.e. gather all the files from a folder (including contents of subfolders if 'with recursion' is specified) into a list.
I have no idea whether BBCommands gets installed as part of bbedit lite, or if not, whether it may be distributed independently, but it's worth knowing about. Get it if you can.
Writing to a file is also best achieved with an OSAX. 'Standard Additions' will do it, but there are other options.
