FYI, TE+ is recordable and produced the verbose version of this:

tell application "Tex-Edit Plus" to stupefy window 1 converting quotes


Alternatively (and in many ways a preference) would be if this could be done
via the Terminal because following the stupification the data is imported
via a Terminal script into mysql.

No OS X here so I have nothing to offer for terminal stupification. :P
