Peter,
I sent you some scripts for counting/renaming files (as per your other
message) directly. As for the OS X distiller/spooler option, OS X has PDF
creation natively as a print option from the chooser, which would use the
default Apple print spooler to spool the jobs. Maybe someone else can comment
about how to interface with the settings, etc (although I would think setting
the defaults would stick if you saved them to the templates you use to
generate new documents).
