Sounds like a tall order. What do you want to script exactly? The actual taking of pictures or the transfer of image files to your mac?
Dunno if it will help you, but there's a little app called Videoscript which is designed for scripting capture and image processing. Lots of fun if you have a webcam.
It's targeted at Installation Artists and Surveillance Technicians (!) The built in scripting language is very close to Applescript, and there are hooks to Applescript if you need to integrate a Videoscript process with something bigger.
There's a free lite version available.

Note: Webcams are mostly very cheap, and there are various utilities for automating and synchronising capture, including the fairly scriptable 'BTV'.
