Just for the sake of argument, I'll try and present the Eudora case. Every time I try and switch to OE or Entourage I keep coming back. There's a number of small reasons but the major reason is speed. Filters, searches, moves, copies and any other batch operation works about 5-10 times faster in Eudora compared to Entourage. Admittedly, Entourage v.X is much better than it's predecessors but it's still a snail compared to Eudora.
Also try option-clicking on any criteria in your mailbox window (i.e. subject, sender, status, etc.) and watch every message matching that criteria instantly group together independent of your current sort status. There's so many little features that only Eudora has that keep me hooked even though the interface sucks in comparison to many others.
Eudora's AppleScript support leaves much to be desired, however nearly everything you wish to do can be accomplished. It appears that they didn't build AS filtering support directly into the product for security purposes, but you can trigger an AS just the same. Using the notification feature and an applet you get the same result, albeit much more clumsily than OE or Entourage.

And so, which would folks on this list recommend? Eudora? Microsoft Outlook Express? An upgrade (what would it be?) or another client not yet mentioned?
There's no clear winner as far as I can see. Here's the downsides to each product that I'm familiar with:
Outlook Express: there's no upgrade path to OS X unless you want to pay for Office v.X. If you need a full office suite and don't mind spending $500 then this isn't a real issue.
Entourage: again, it's the money for the whole suite just to get the e-mail client. Poor IMAP support frustrated me to no end, although it does seem to work OK with Apple's mac.com IMAP servers.
Eudora: currently this is the only e-mail client that I'm aware of that can use the same Eudora folder and all of it's settings from both the classic version and the OS X (beta) version without update/importing information. Switching environments is therefore seamless. AS support is lacking but with a little work can do the job just the same. This is the fastest and most customizable e-mail client I've seen and continues to be the only option for me.
