You can set iTunes "current encoder" with

set encoder to encoder "<name of encoder here>".

You can obtain the names of the encoders with:

set available_encoders to get name of every encoder

You can back up current encoder first, then restore it after conversion

To avoid localization issues with encoder names, check each encoder's
format, it will either be "MP3", "AIFF", or "WAV"
