Seriously, it's possible that your mail server is stripping some of the
headers on you. Some servers (especially windows-based things) have a nasty
tendency of doing stuff like that.

Those are intended to help mail client authors write automated systems for
these functions for end-users. They're a fairly new standard that we're
trying to encourage adoption of.
