Getting the Documents Folder

I want to eliminate naming my Startup Disk.
Now I am saying:
tell application "Finder"
set identityList to every folder of folder ,
"Apple:Documents:Microsoft User
Data:Identities:";
But isn't there a way to say:
path to Startup Disk & "Documents"
or do I need:
Path to At Ease Folder
and what is At Ease anyway?
