That depends on the app. A few (like AppleWorks) let you script menu
commands directly (select menu item "Paste" of menu "Edit"), but most just
provide commands for commonly used functions (open, close, save, copy,
paste) without troubling the menu bar.

If you absolutely, positively need to trigger a menu item, there's always
Youpi Key (free and script-friendly), but... one thing at a time, eh?
