AppleScript Language Guide. It is a book, available free in PDF format from
the AppleScript page on the Apple website. It's the main - only - reference
we have. Even though written for AS 1.3.7 (OS 8.6) it's still mostly
accurate and not too far from complete. There haven't been too many changes
to the actual language. It doesn't deal with applications. You'll also find
PDF manuals for the Finder (hopelessly out of date) and Scripting Additions
(very out of date, but useful for some commands).
