Or a more common one is cmd-first letter of the button. Both of these are
very old Mac UI conventions.

Yes, but we seem to be getting most of our software written by kids that don't know any Mac UI conventions -- as one of my favourite developers calls them "aliens from planet UNIX".

I say send them all to Siberia for a month with a truckload of SE-30s and a stock of system 7.1 and let 'em learn the basics! Otherwise within a short time we'll be in the sorry plight of WIndows users where every program has different shortcut keys and different everything.
