My guess about that is that those folders that you obtained by copying from another volume (you rarely make and fill new folders from scratch, n'est-ce pas) get copied in alphabetical order. This can be checked easily: launch the copy of a big folder, stop it in the middle (for instance, smash violently the computer), you'll see that only the first items in alphabetical order were copied.

Once such an ordered folder is created, new items get appended to the (formerly ordered) list. One would be able to check that the non-ordered items are the recent ones.
