If the search field isn't there and there isn't a chevron there either, then you can add it by choosing "Customize toolbar" from the View menu.

Oh, the word "search" will be underneath it only if you have both icons and text displayed in the tool bar.

Also, if you have only Text displayed in the toolbar, if you click on the word search, it will open the Finder's search dialog (same as if you type command-F or choose Find from the File menu). This is very similar to the former Sherlock search feature in earlier versions of the OS. (Oh, I think this applies only to Jaguar; if you have earlier versions of OS X, then you need to use Sherlock to find things in the Finder.)
