How can you do this? I'm very concerned about speed for mass
processing with
ID. I looked almost everywhere but didn't find any property or
preference to
hide the document. May be a new feature of Indesign CS? (not yet

Yes, it's new in CS -- there's a 'showing window' parameter to the open
command. You can also use a 'do script' command to avoid unnecessary
screen redraw, and you can script things like hiding the palettes and
minimising windows. FWIW, performance is much improved across the board
in CS.
