How about two copies of the entire .plist? The Applescript needs only to change the names or duplicate the desired one. You might even be able to create a Unix link which can point to the one you want.
But be careful about just when the plist is read. Apple's environment.plist is read only at login time and I worry that the iBeeZz application may read the plist only when it is started up.
