1-) What application should I install on a mac 9.0 to run shell scripts ?

You will never be able to run shell scripts from AppleScript on MacOS 9.

About the closest thing you can have to that is to install the Tcl/Tk shared libraries or the Alpha text editor and use the Tcl language equivalent calls to achieve the same purpose. There are also a few unix-like calls available with an MPW Shell install.

2-) Where could I get documentations about shell scripts ?

Get a book on Unix (or look on the internet for articles about learning unix).
