the Mail application for OS X
How do I do it?

tell application "mail.app" to activate

Or change the name of the Classic application.

BTW, what Classic application is it? I don't recall one named "Mail."
There is a "Mail" application with OS 8+ that's actually an AppleScript. It simply fires an event, GURLMAIL, to start the default email application.
