Is there a way to activate a script using e-mail?

For instance, an e-mail received by a certain address
will activate a script that will copy the subject

I see you're using Outlook Express. All you need to do is set up a filter or "rule" for incoming mail that will run a script to do what you want. You can do the same in Mail. As I don't use either as a rule, I'll leave it to others to tell you how. In Eudora you collect the a list of message references as mail arrives which is sent to a notified applet at the end of the mail-check.
