It's plain old text that's missing something -- the encoding. I got bitten
by this just this week: a script that used plain text died when run on a
computer that had a folder that used a non-English character in its name.
Because of the way the app worked, we ended up having to rename the folder.
The bottom line is that you're losing information when you convert these
strings to plain old text, and sometimes that can bite you. Of course,
sometimes you have no choice because of what apps require, but I can see why
Apple's discouraging it.
Hopefully Unicode will eventually ride to the rescue...
