I have to be missing something here.
For instance, I use pdf2ps and it does not accept the slightest space in the file names, including when quoted. Do you mean "[...] any real example of a shell command *included in the standard installation* [...]"?

Let me put it this way: if you can get the command to work from the Terminal with proper quoting, then using it from AppleScript with "quoted form" should also work. (As it happens, I have Ghostscript installed myself, and I used pdf2ps on a file with spaces in the name with no problem. I'm not sure what your difficulty is.)
