Brian,
I would just replace the jpegs using a script in the first place. Make
one that is a drag and drop, an agent, or a folder action. If your
server is not converting the jpegs to eps's then you could script that
as well, and have an automated workflow for it that would probably be
more acurate than doing it manually.
