My other issue is that I'm working on a Mac OS X setup for Japanese, so
I can have simple strings in Japanese.

If the osx setup is japanese you can change it in the "international" preference pane, to anything else you need. Like english, for ex. You can change that local setting by application: change the locale and start an app, the app will adapt itself to the new locale (corresponding menus etc), change back the locale and start another app, that one will respect the new locale environment if it can etc.
