If you don't mind resorting to shell, cscreen <http://www.pyehouse.com/lynn/cscreen.dmg> and SetDisplay <http://macosxlabs.org/tools_and_scripts/script_archive/scripts/ miscellaneous/university_of_utah/SetDisplay.html> both offer this functionality on the command line. SetDisplay offer more options, but unlike cscreen it will set your display to resolutions your monitor can't support.
