When I wanted to do this (years ago, under Mac OS 9), I resorted to the
Jon's Commands scripting addition, which had something like "set screens
to." With GUI Scripting in OS X, that's no longer entirely necessary but
might still be desirable. With JC OSAX, you could detect unsafe resolution
changes.

BTW, my 17-inch PowerBook G4 (same screen) has a 1024x640 resolution
available, so I don't doubt your iMac does. (I have played Halo in that
resolution since the native resolution is not a choice.)
